Chicken Ala Mamma
Ingredients
1 ½ sticks of butter or 6 oz.
1 ½ cups plain bread crumbs
5 slices of bacon
1 ½ lb boneless chicken breast
6 thin slices of provolone or swiss cheese
5 oz olive oil
1 onion
5 red tomatoes
2 cloves garlic
1 oz vodka
4 oz cream
Salt & pepper to taste
½ cup Fresh grated Pecorino cheese
Chopped fresh basil (approx. a dozen leaves)
1 lb. Dry Pasta of choice
Preheat oven to 400 degrees
Begin by greasing pan with butter. Then melt butter, add bread crumbs, toss until all
crumbs have absorbed the butter. Place to side. Place chicken in greased pan. Lay
bacon on top followed by cheese and cover nicely with all the buttered bread crumbs.
Place in oven for 20 minutes or until done.
Pour olive oil in a sauté pan or pan of your choice. Bring oil to temperature, add onions
and sauté until translucent. Add garlic, cook for about 1 minute. Add half of chopped
tomatoes, stir and cook for about 3 minutes. Add remaining tomatoes, stir and cook for
about 2 more minutes. Add vodka and cream. Salt and pepper to taste. Add half of
basil.
Boil water, add pasta. Cook until aldente and then strain. Add ¼ cup Pecorino cheese,
a ladle full of tomato sauce and stir pasta. Garnish each plate with remaining basil and
Pecorino cheese. Serve on side with chicken. MANGIA
