Pan Fried Sausage

2 med. Onions cut julienne
2 lg Red peppers cut julienne
2-3 lbs Sausage
2 tblsp Capers
1 tsp Dried Fennel Seed
½ cp Extra Virgin Olive Oil
Salt & Fresh Ground Pepper

Pan Fried Sausage

Preheat oven to 500 degrees
Pour ½ cup oil into frying pan, heat. Add onions, stir for about 1 minute, then add
sausage, capers and fennel seed. Simmer on high heat for about 5 minutes, then add
peppers. Toss peppers in frying pan, then transfer all to baking pan and put in oven for
about 20 minutes or until done with a nice roasted look.
