So we made it through our first Holiday Season in the new kitchen and it was a lot of fun. Don’t get me wrong, there were a few challenging moments, and I think all of us have couple new Papa Joe tattoos (burns). Either way, we had a blast and were able to come up with some really incredible dishes.
One of my favorite dishes that we created in the beginning of the Holiday Season was called Shrimp & Scallop Arrabbiata. This beautiful dish was inspired by one of our guests that frequents Papa Joe’s and asked if I could create an Arrabiata Sauce. So here’s the dish: we sautéed shrimp and scallops in a white wine butter sauce, then tossed in some capers and sweet onions, added some filleto sauce, a little cayenne pepper and Papa Joe’s white spice (a blend of seasoning) which I call white lightning because it brings the dish to life along with fresh chopped basil. This dish is aromatic and refreshing with just the slightest kick at the end.

Fun Fact…
Arrabiata means angry in Italian. Sources say that this sauce was created in Italy by a wife who was angry at her husband and wanted to show him through cooking how mad she was so she threw in some hot peppers to teach him a lesson and when he sat down to eat the dish, he actually enjoyed it! So that’s how the Arrabbiata Sauce was created
